INTRODUCTION. It is truly remarkable that you can proof your bread and bake it in the same appliance!  Only one loaf at a time can be prepared in this unit.  How does it work and why?  Several ancient techniques along with modern ingenuity were used to create the proofer-baker (P-B).  Skill is required to make a good loaf of bread, and few things are as appealing to our senses as artisan bread.  The P-B invention affords the ability and expediency to accomplish this feat at home.  Whatever your recipe, just mix, knead and form the dough, using your method by hand or mixer.  The proof is in the bread, and the aroma is in the air!

OPERATING INSTRUCTIONS.

Place the Bread Wizard Proofer unit over the top surface of a gas range or electric range heating element.  Diameter of the element must be 9 inches or less and contained within the P-B unit.

Fill a 2-inch deep pan or skillet with water about three-quarters (3/4) full.  Place pan or skillet on heating element as depicted on (PHOTO or WHATEVER).  Turn heating element on high to achieve rapidly boiling water.  (Adjust heating element as needed through process to maintain boiling water and temperature between 92-100 degrees F. NOTE:  Yeast is killed by temperature exceeding 140 degrees F.) Steam will rise up through openings in bottom shelf into the chamber and exit through top openings of unit.  Will take about 5 to 10  minutes for boiling action to begin its process of dispensing the steam.  (Note: For faster action, start process with hot water.  Exercise extreme caution with handling of hot water!)

Open glass door and place pan filled with prepared bread dough on shelf.  Then close glass door. Steam will circulate within chamber similar to that of a convection oven.  (Glass door will collect steam in the process, however, can be wiped off with towel or sponge  by opening glass door.  Then close door quickly.)

Proofing action should take about 10 to 20  minutes to double or triple in size, depending upon type of bread or recipe.  Time of process is contingent upon user’s desired height of bread dough and recipe.  Ensure that steaming water is maintained in the pan or skillet throughout the rising process.   Warning: Bread will rise quickly, so do not permit it to rise to top of chamber.  It is preferable to use a baking thermometer.

When desired rising is achieved, carefully remove bread pan with proofed dough and set aside.  Remove pan or skillet from heating element and close lower metal door.  Place the metal plate over unit top to close openings.

When 350 degree temperature is reached, place bread pan with proofed dough in *upper chamber. Will require 10 to 20 minutes to bake, depending upon recipe.  When baked turn off heating element and remove bread from chamber.

*Optional baking method:  If preferred, bread pan with proofed dough may be placed in pre-heated regular kitchen oven and baked according to prescribed temperature.

Open tempered glass doors and place pans filled with prepared bread dough on shelf.  Then close glass doors.

Fill a 2-inch deep pan or skillet with water about three-quarters (3/4) full.  Place pan or skillet on heating element  as depicted on above drawing.  Turn heating element on high to achieve rapidly boiling water.  (Adjust heating element as needed through process to maintain boiling water.)   Steam will rise up through openings in bottom shelf and exit through top openings of unit.  Will take about 12 minutes or less for boiling action to begin its process of dispensing the steam.  (Note: For faster action, start process with hot water.  Exercise extreme caution with handling of hot water!)

Proofing action should take about 25 to 30 minutes to double or triple in size, depending upon type of bread or recipe.  Time of process is contingent upon user’s desired height of bread dough and recipe.  Note: Ensure that steaming water is maintained in the pan or skillet throughout the rising process.

When desired rising is achieved, remove bread pans and turn off heating source.  Bread is immediately ready to place in preheated oven for baking.

*An electrical hot plate (stand-alone heating element) can be used as an optional heat source under the proofer on a protected surface area.  (Heating element placed under shelf will accommodate a 2-inch high  pan or skillet.  Opening in back of unit is accessible for electrical outlet hookup, which should be done prior to placing bread pans with prepared dough on shelf.)
