What is a Bread Proofer?

A bread dough proofer is usually a box or chamber with a controlled setting for warmth and humidity.  It provides the proper environment and encourages the yeast to ferment and act on the dough to help raise it to the desired height.  The warmth and humidity in a bread proofer,  promotes the yeast’s feeding off sugar in the dough and releasing carbon dioxide. This action and reaction results in a faster and higher rise of dough.
