Gluten Free Bread Making
In today’s world, gluten sensitivity, wheat and other allergies has become a common dilemma in households. Gluten free and allergy free bread, that you or your loved one is not going to react to, is now a thriving business. Finding a recipe that really works and or results in a proper loaf of bread is few and far between.
Most gluten free and/or wheat free bread recipes rely on eggs to provide the rise that gluten in regular bread promotes. Even then, proofing bread is still a concern. Changes in humidity alone creates havoc in gluten free baking.
Proofing gluten free dough is tricky enough without the added hassle of going egg free. Without the use of eggs as a binder and gluten substitute in this case, most gluten free bread will not rise much or, even if it does, often results in falling after baking.

Our tests for egg free and gluten free loaf bread using The Bread Wizard dough proofer resulted in higher loaves without the accompanying “falling” as it bakes. The gluten free bread held up their shape even after they finished baking and was cool enough to slice.
